Setting fixed depression?

From what i remember controlling single phase AC motors is best done by adjusting frequency with an inverter and they seem a little pricey.

Instead could i use a throttle body with the spring removed and a servo motor attached.

This could thenn be controlled from the front of the bench with a simple servo motor controller like this.
